Ninja Scroll. Is a movie, is relatively old, but still holds up well today. (Seems there was also a 13-episode series in 2003, but haven't seen that). Both are done by Madhouse. Focuses more on weapon-based side of martial arts, certainly has supernatural elements included.
Street Fighter II the animated movie is also an obvious choice.

Might seem like a strange suggestion but there are occasionally decent fights and the rest of the time things are so silly and funny that you just keep watching anyways.
Soooo many good fighting shows are incomplete (Tengou Tenghe being the worst offender by far) so I simply can't recommend them.
