Final Fantasy 6 has one of my favorite soundtracks. It's from the SNES, but you can find the Piano Collections or other versions with 'real' versions of the songs.

My favourite soundtracks are Deus Ex, Bastion and Jet Set Radio. Standouts include Deus Ex's UNATCO, Hong Kong Streets and Majestic 12 themes, Bastion's "A Proper Story", "Terminal March" and "Setting Sail, Coming Home", and Jet Set Radio's "Let Mom Sleep", "Sneakman", "Sweet Soul Brother" and the non-soundtrack "Miller Ball Breakers". Also, it's not a soundtrack per se, but I've always been fond of Smashing Live.

"Ninth Crusade" from the 'Crusader: No regret' soundtrack.

And "Hunter" from 'Hitman: Blood Money'

"Wood Carving Partita" from Castlevania: Symphony of the Night.

Perfect Dark's soundtrack is pretty rad.
