I'll try to fill in all mentioned types with 1 recommendation.
gaming:
https://www.youtube.com/@ryegamesofficial (reason: plays dead/unpopular games, revisits old stuff)
https://www.youtube.com/@MathChief (reason: exposes lots of games releases/announcements, from popular to unpopular, his documentary can be quite painful to listen to, but he does expose lots of games and there is always new games i learn from here)
vtubers (not really my kind of thing):
https://www.youtube.com/@AiAngel (reason: i used to watch this channel before it became a vtuber channel, previously it was VR focused with funny reactions, i saw the transition from the previous content to vtuber but i didn't tag along for long)
music:
https://www.youtube.com/@MrSuicideSheep (reason: this is oldschool, i feel like nothing beats this channel when it comes to music, i found about this back when i was in highschool)
https://www.youtube.com/@LofiGirl (reason: just as good as suicidesheep, i found out about this one like 4-5 years ago)
food:
https://www.youtube.com/@creative_explained (reason: i don't feel like it's really related to food, but more so know-how with growing your own food)
https://www.youtube.com/@BayashiTV_ (reason: food related, overwhelming though. This is probably the food channel i saw the most videos/shorts from)
art:
https://www.youtube.com/@MeatCanyon (reason: to me this is both art and animation/cartoon, weird content, but somewhat funny too)
Spraypainting (no channel in specific, but i do like watching people create quick art using spraypaint from time to time, example, artists creating cosmic stuff, i did buy some cosmic paintings back in 2020 when i found out about this, during vacation in my country, then i searched youtube for more of this)
comedy:
https://www.youtube.com/@InternetHistorian (reason: it's just too good, yes the videos are long but this is top tier comedy, the creator does put lots of effort and time into his videos, which is why they also takes ages to come out)
unboxing:
https://www.youtube.com/@Mrwhosetheboss (reason: not really unboxing focused but it does happen from time to time, i feel like this is the main channel for unboxing tech related stuff for me, i do like his videos when he compares tech or showcases weird tech, this is why i am mentioning it.)
history:
https://www.youtube.com/@Thoughty2 (reason: not really a history channel, but he does touch some points at random with his videos)
cartoons:
https://www.youtube.com/@hyunsdojo (reason: oldschool stickman animations, there are even older ones but this is the oldest active channel AFAIK)
https://www.youtube.com/@Jhanzori (reason: more stickman stuff, also "newer")
https://www.youtube.com/@TorrinSol (reason: person that creates dragon ball animations using a game and a mix of other tools/mods)
etc/random/others:
https://www.youtube.com/@CarlieAndAnge (reason: reaction channel, mostly focused in anime, sometimes they react to non anime stuff like tv shows)
https://www.youtube.com/@MooresLawIsDead (reason: game tech news, game tech leaks, etc... Usually one of the early sources for leaks on technology)
https://www.youtube.com/@MondoCool (reason: exposes fanmade manga from the dragonball fandom. Does voiceover, some animations/effects on the manga to make it less dull of an experience)
https://www.youtube.com/@TierZoo (reason: tierlist for animals/insects)
Most of these channels is what i watch/rewatch actively, some of them every once in a while (like in over a month but less than 3 months). There are more than these, but i feel like i mentioned quite a good selection already.
Also, thanks for the marbles mention, i did watch many videos years ago just for the heck of it. Completely forgot it was a thing!

I like to take a look at CCC (Chaos Computer Club)'s youtube every now and then. There are a lot of interesting talks there, e.g. 35C3 - Conquering Large Numbers at the LHC or, for the German speaking crowd, GPN16: Wie baut man eigentlich Raumschiffe (urs).

I've enjoyed marble racing videos like those by Jelle too!
Also enjoy watching:
Cathy Cat https://www.youtube.com/@CathyCat (I have a big crush on Cathy)
Ask Japanese https://www.youtube.com/@AskJapanese
LogicSmash (vintage logo channel) https://www.youtube.com/@LogicSmash (and other channels dealing with vintage media logos)
Various fan noise channels
Various vintage synthesizer channels
And Cinemassacre/AVGN and CS188 (don't know if their humor is too crude/NSFW to post links here, but look them up on YouTube)

https://youtube.com/@foekoe - this is my favourite gaming/reviewer youtuber, if it were not for him, I would've missed out on a plethora of indie games in life and be stuck in a constant loop of recycled AAA and monotonous games.
And also unlike pyrocynical, he doesn't cope with his inability to fund and post high quality well edited videos frequently by posting god awful slop content on his second channel.

A bunch of general categories:
Math, Science, Computer Science
Story telling, writing
Board games
TV shows, et cetera
Video game design and "behind the scenes" stuff
Video games in general
Most importantly, though, my favourite kind of content: Incredibly detailed deep dives into specific games - the kind of channels that investigate every facet of one game (or game series), explore and explain glitches and show off obscure stuff you wouldn't find on more general gaming channels.
There's more channels I like to watch, but that should be enough for now. :'D
