You should read the FAQ. Anyways, just to clarify 2 and 3, you have a whole week to send your gift to the winner the way you want after the giveaway ends. He shouldn't add you during that time, but some people may do it. After you send him/her the gift, key, or whatever, and he activates it, he must mark it as received. If he already activated the gift and didn't mark it, tell him to do so. And if he still doesn't mark it as received, contact support.

If you are giving a steam gift from your steam inventory, you can either send it to the winners email address or add them as a friend on steam and then send it as a gift through steam. I prefer to send it through steam.
If you have a key, there is a spot to enter the key when you create the giveaway. When the giveaway ends, the key will not be sent automatically. You can go to your giveaways created page from the link at the top of the website or just go to the giveaway and click "winners" on the left side. There will be a button on that page that says "send key".

You can host a giveaway for any game as long as they are on Steam (and haven't been given for free for promotional purposes before). This can be in the form of a gift link, a key or something directly from your steam gift inventory.
Your games won't be sent automatically. You need to go to your created giveaways page to send the key. If it's a gift link you can send it by email. The email address of the winner will be visible once your giveaway concludes and a winner is chosen. You can also choose to add the winner as a friend on Steam to give them their game. Don't forget that you have a week to provide the game to the winner.
Winner should not contact you. It is the host's responsibility to send the game to the winner. However, if the winner does not mark the game as received after a week even though you sent a working key and all your efforts to contact the winner were in vain, you can create a support ticket to either request reroll for a new winner or ask support to take a look into it. Requesting a reroll can be risky as the winner "might" use the key elsewhere which is a breach of rules. There are times when the winner activates the key but might not mark it as received, by creating a ticket you can get support to mark it as received. But again the winner has a week to activate and mark as received after the key is sent.

I just have a few questions
1 - Do giveaways have to be in steam inventory or can they be keys?
2 - Does my item get sent automatically or will the winner contact me?
3 - What if the winner doesn't contact me?
