Skyrim. But I've dumped as many hours into it modding as playing.
Stardew Valley. It's relaxing and its sense of progression and growth is just addicting. Plus with the different marriage options, homestead locations, and free-form build options for your farm means you never run out of new things to do. Plus, throw in the fact that they're still working on multiplayer and occasionally updating. Easily at the top of my list.
Binding of Isaac: Rebirth. I've heard mixed feelings about the mod following (Afterbirth) but this expansion is amazing. I've dumped countless hours into it, and I love the achievements and the potential for random builds and the 'who knows what will be in the next room' feeling. Plus, depth, difficulty, lore and enemy pool expand more as you 'progress' through the game. I'll always always go back to it.
Roller Coaster Tycoon World 3: The 'new' release (RCT World) was a bit of a bomb. Glad I didn't drop money into it before reviews came in. And I still have this gem installed and still go back to it. What can I say that hasn't already been said? It's just an amazing game that I lost my childhood to and I happily return to.

I haven't played it myself, but I've watched some Let's Plays and it has amazing reviews.
It seems like the contender for the spiritual successor to the RCT series. Much more successful that actual RCT World. That one and Parkitect. But honestly comparing the two, I'd say to go for PC. Everything I've heard says 'worth the buy'.

If you're looking for a sandbox experience Planet Coaster is the best in it's genre by a landslide. If you're looking for a challenging campaign, not so much.
You literally can build pretty much anything in it, much more than you ever could in RCT3, and the easy upload/download to the Steam Workshop gives you access to everyone else's creations if you're not much into putting the hours yourself. And there's some really amazing stuff there.
My advice is to go check out a few creators on youtube(silvarret and RCT D! being a personal favourites) and if you like what you see go for it, it's worth every penny!

VA-11 Hall-A: Cyberpunk Bartender Action is one of my favorite games. I'm playing it for the third time and the atmosphere and story continue to drag me in as though it's my first time playing it. The mixology is simple and easy to remember, providing an interactive aspect to the story that keeps it from dragging too much.
