If you have someone you trust or have another account, simply trade all of the separate gems to another user and they will all come bundled after the trade.

I used gems to make boosters for new games.
They have cards they sell for like $.60 each.
I think I made some for Warframe and King of Fighters 89 when they came out. Also some for Quake Live.
Since it took minimal effort and resulted in some money.. why not?
Another reasons gems are good is because if you want to craft a game with no one selling cards for it, you can do so. I reckon gems are fine. Its just a matter of using them for the right things.

You don't need to buy gems to get booster packs for every game. Only those where the cost of gems required for a particular booster pack is lower than the price of booster pack in the market. Its common sense.
Also gems are used as currency for trading within Steam. Its also a good investment option if you can wait till next Steam holiday sales when their price go up at least 20%.
