Not just one. A little parcel of games.
Darkest Dungeon
Slay the Spire
Into the Breach

Used to be Awesomenauts, but I got fed up with the constant bullshit thanks to the awful matchmaking and balancing, which essentially turned everything into a gamble. The devs have abandoned the game for good in that state, so there's really no good reason to care for it.
Right now it kinda is Pokémon White 2 (+200 hours), but I'm almost done with the postgame content so I'll probably be dropping it soon.
As for games I never uninstall, that's all of my favorites section on Steam, and there are quite a few games in there, but I don't play any of them regularly on a long term; I usually just beat a game and hop on to the next one.

I said that years ago with Guild Wars.... After over 7,500 hours played. >_<
Spoiler- I finally walked away from it.

I wasn't competitive, but I did have PvE characters that were in HIGH demand for the elite PVE areas. I mean such high demand that I was getting invites from people I teams with in the past the split second I logged into the are or even online.
I had a healer build that was so energy efficient and HIGHLY effective that I was able to keep teams alive for 2 hours in the area AFTER the second healer bailed on us. And that was a 12 man team. What got me was, other than noobs and morons, was the fact that the RNG HATED me. I almost NEVER got the rare and coveted drops. And being the fair player (meaning complete idiot) I didn't accept charity shares from the other players.
Oh well.

Well, one of my things is that I hate, hate, hate, HATE cookie cutter builds. I HAVE to try and make my own. A LOT of trial and more failures than I are to admit. I was constantly rejecting team invites early in the game when I played my elementalist as people advertised looking for a 'nuker'. They asked me why I declined and I explained that a nuker (back then) was a basic fire elementalist that EVERYONE used. I ran a HIGH damage/support earth only build that I made. Lets just say that I turned a LOT of heads when I was FAR more effective than their fire was. Damage, buff and debuff all on one character.
I also reverse engineered a high end area for farming a HIGH trade value item. I reversed the class combo, added in a touch of DPS/interruption and was once again in HIGH demand after the team I was first on was skeptical about it until they saw how I worked it. Needless to say, I was never waiting for a team for long.
I also NEVER shared my builds with ANYONE online. Didn't want to see it ruined by the cookie cutter kiddies.

Paradox games like stellaris, CK2..
Or sometimes CA games like Total war warhammer 2 with sfo, or more likely Rome 2 with Divide et Impera.
And since a few months Star Wars Battlefront 2 on origin because it's fine now.

Volkov: "Keep your men out of sight. We don't want to spoil our trap, do we?"
Agent: "Yes sir! I mean, no sir! I mean, yes to the first part and no to the second part. Sir!"

League of Legends, been playing since 2010 and even when I've taken a year break from playing (besides a handful of ARAMs) I was still watching pro league and haven't uninstalled. Helps that I've found a few groups of friends to play with voice chat over the years, and in the past year got my best friend really into it.
As for Steam it's probably Orcs Must Die! 2 / Sanctum, easy to pick up and mindlessly fun (since I've beaten all the levels many times by now) yet customisable so each playthrough a bit different.

It used to be (and probably still would be if I was off of steam)
Civ 3 Complete (with Railroad Tycoon 2 mixed in),
now it is:
Arma 3 (missions or mods)
and
American Truck Simulator / Cities Skylines / Medieval Total War Gold
I just bought all the expansion packs for Crusader Kings 2, so maybe I will finally get into that.

Xcom 2, Stardew Valley, and Fallout (4 and New Vegas) all have a permanent place on my hard drive. If they ever update Diablo 2 with better graphics I'll be all over that.

The Elder Scrolls Online...don't know why cuz Bethesda/Zenimax always find ways to tick me off, yet I am logged in DAILY for at least an hour

A game that I never unistall: I just formatted my pc so :( (can't remember)
A game I would play over and over: Furi, my favorite bullet hell and favorite soundtracks.
A game that I would speedrun over and over: Dishonored 2, more good soundtracks and kind of action.
Hope this is ok :P, nowadays I'm taking care of my backlog and recent games.

You know we all have at least one. That ONE game we never uninstall. Never trade in. Never lend out.
That ONE game you go to when you can't decide what you want to play. The one you just keep going back to no matter how many games you have in your backlog.
For me, it's Fallout 4. No idea why. I just LOVE exploring the world. I STILL find things I haven't seen.
Well, that and I still have to see the Institute ending. I only saw the one with the Brotherhood as my allies.
So, what's your 'Go To' game?
