warframe??? it's free to play and seems there's a lot of people. however the content of the game it's grind grind grind grind. so maybe he get bored pretty fast.
S4league another F2P game idk how is at this moment but a few years ago was very good game and funny idk if still alive this game.

also metal slug games but this can be dificult because you need to dodge. (but you can use a PC controller if you buy them from steam for example)
check the game one finger death punch you only use mouse and it's really funny game (isn't a fps but it's an action game and reallyyyy funny) also the game configures alone to more easy or dificult depending on your playstyle so for a kid maybe he start lossing but after a few loses the game will make more easy for he.
blazerush game it's another good semi fps (cars whit guns ^^ just check steam videos)

yes, he should learn to use two hands... he's already further along than he was a few weeks ago, but he still has a long way to go. I have a controller, he knows how to use it, but some games are better with k+m
Bioshock... I remember not being particularly impressed, but I think you might be right. It's been a while since I played it, but I think that's one that would be good a little further down the line.

yep metal slug are 2d run-gun from neo geo games check steam for videos etc... it's really funny game but really casual just for play like 20 minutes one day and another and don't play anymore but maybe for a kid can be more funny ^^ while he wait another game comming out for example.
warframe it's on steam too and the IA isn't too dificult so he can move whit one finger only somethimes he need to jump + move at same time and this can be a good training to your kid to start.
however he will need a little help from your part to understand 2-3 mechanincs of the game but nothing too dificult once he do it 2 or 3 times.
graphics are good and can play whit other humans too (however always VS IA only) like survive the max time for example.
i really recommend that game while you choice another. it's f2p so you only lose some time teaching your kid movements etc...
and every day you join the game you get some rewards (you can get offer for the platinum that's it's the resource you get from paying real money, in case you want to put a bit of money in it ^^)

There are a ton of more interesting, fun and mind-challenging games for a 7-years old out there. And yet you're looking for a FPS because your kid wants to play one? Not really my place to say, but what the hell I'll say it anyway: sucks to be him having you as a father.

He gets great grades in school, plays every sport out there, and is getting a good dose of culture. He also plays with Lego and plenty of interesting and mind challenging games. This isn't his only source of entertainment. But I do appreciate the sentiment

Now that I think about it, Bioshock Infinite could be a fair choice, only shooter that comes to my mind capable of being fun while not gory, scary or just killing people mindlessly 'cause why not.
(Ironically someone suggested Spec Ops: The Line, whose story is a critique on this very matter. Still, on a little kid that game could just as well have the opposite effect.)

Bioshock Infinite is pretty gory, and has a very dark story. I'm not sure I'd recommend that one.

How about.....Stanley Parable? Polarity is about reversing your polarity at specific times. Lets see here...
If your son is a bit older and likes playing Platform games. Sonic and Freedom Planet would fit the bill.
For something like Zelda. Oceanhorn: Monster of Uncharted Seas would probably keep him entertained when he is older.
Cloudbuilt is a 3D TPS where you can run across many levels in the sky. Bit hard for a 7 year old but I recommend it if you like jumping fast and going up walls and falling from great heights.
Antichamber is a 3D maze with puzzles that might prove too difficult for a 7 Year old son.

DeadCore is pretty much about the same like Cloudbuilt but it is an FPS with a Platforming focus. Keyboard + Mouse friendly.

If your son gets a bit older and loves to do a bit of tactical planning with a minor bit of a FPS/TPS. Valkyria Chronicles would prove to be a fun game where you can also drive tanks and do headshots aplenty with Snipers, rocket Launchers, Machine Guns, and Flamethrowers.

Overlooking the other comments I have plenty of simple On-Rail shooters that your son could play. That is if you have a Wii.
Sin and Punishment:Star Successor is pretty good.
For the PC there is IKARUGA
For SNES. Gradius Series
But all three games can be tough as balls. Though Sin and Punishment has an easy mode.

I wouldn't recommend Antichamber, those puzzles can get pretty confusing. If the kid was struggling with Portal he'll definitely struggle on this.

Mirror's Edge.
Not too hard and not too easy either. You control the mouse and let him do the movement part.
I voted for Thief Gold (which is my most favourite game of all time), but it is too hardcore and creepy for a 7-year old toddler. And my guess is that he will want to attack enemies blindly, which often results in frustration because the game does not encourages you to do so. Map layout of the entire game is too complex as well.

This is an odd suggestion but Planetside 2 (a MMOFPS) might be worth considering, assuming that you're supervising him while playing. The game as a whole is kinda complicated and difficult to get into, but you could help him set up different situations that he'd enjoy - finding a sniping spot, or manning a turret or tank - and many individual situations in the game don't require fast paced or complex controls. If you've got two computers that can run the game then it'd be fun to have one of you drive a tank or aircraft while the other guns.

Maybe Plants vs Zombies Garden Warfare 2 (single player mode). honestly he's better off playing platformers at this age. they're more mentally stimulating, colorful and just entertaining, and some DO include shooting mechanics, like ratchet & clank. but that's obviously not on PC (unless you want to get into emulation)

The Typing of the Dead is the only game that would probably be good, and that might be a bit scary for a 7 year old :/ (Zombies and stuff)

Unreal Tournament, my kids loved playing that at his age... and now as well. Get him some of the funny voice packs for it from planetunreal.com and set the bots to noob, he'll have a blast :)

UT3 is alot faster paced than the 1999 GOTY, but it you only give him one or two ui players it shoud do ok. Make sure to put him in god mode for the first few rounds so he gets the hang of it without getting totally frustrated and rage quits..lol Tilde key and type "god" :) I hope I remembered that right

Holy Potatoes is the only one really appropriathe for a kid, based on social norms. Personally I'd be fine with a kid playing whatever, besides a few really horrible games out there though.

Less fast paced but still action based games, Dynasty Warriors and the similar games are usually fun for kids, older people tend to get bored rather quickly. If he likes anime there's a One Piece and Dragon Quest one which are both quite anime. Battleborn is pretty laid back compared to many FPS games, and isn't really vulgar or anything.

Though it might be a tad bit difficult - SUPERHOT isn't a terrible choice but might be a bit too difficult.
Another amazing choice is definitely Plants vs Zombies Garden Warfare and Blockstorm (tbh minecraft like fps aren't too bad of a choice... if not a bit stupidly flooded with games like this though)

My dad started me off young as well (younger than 7) and didn't discriminate with genres. Violence, gore, sex etc didn't bother me. The sensitive ones, like my brother, can have nightmares about just about anything even aged 9 and up. So good for you for taking an interest in what your kid is playing.
Already been mentioned but, definitely Splatoon or Overwatch. If he's like I was as a child and just doesn't notice the things adults are squirmy about, it shouldn't matter as long as he's having fun but since your kid is not my kid I couldn't choose one from your list. I think it is worth investing in one that's more suitable for your kid rather than picking one from a list you already have. I've been playing lots of Overwatch and it's family friendly considering it is an FPS. It's very cool looking, fun, I'm not sure if he's taken a look but I'm sure he'll love it. It has a huge selection of characters and varying game modes so your 7 yr old won't get bored. He can even play against bots and you can make it a bit easier for him while he gets the hang of it (though I guess a 7 year old should master it pretty quickly). It is really easy if you want it to be (jump, shoot, die a lot), but complex enough to be interesting for adults too (different skills, strategies, strengths/weaknesses between characters). It's something you could play with your kid and have a lot of fun.
Splatoon is a great way to get into shooting games though it is a TPS. It has gorgeous colours and a nice, fun community with lots of community events. It's Wii U so he can lug it around like his best friend too. Feels like Overwatch will last longer though (is more recent too), and the quicker matches are just 10 minutes give or take, not long at all so is great to jump in and out. Certain characters even make it feel like a single player game.
Btw, not FPS but have you guys tried Agario? My niece and nephew are 7 and 5 and they absolutely love it. After playing close to a year they're pretty good at it now too. It has a LOT of different cool skins these days so looks more fun as well.
On Steam there are a lot of cute shooters like It came from space, and ate our brains (top down), Unturned (Minecrafty zombie fun/really well made), Heavy Bullets (FPS, neon colours very arcadey) and Lovely Planet (adorable FPS) etc.

I was going to suggest Serious Sam TFE but it's probably too fast-paced. Star Wars Jedi Outcast might be good. There might be a couple parts that might be a little tough for a 7-year old to figure out, but just tell him to let you know if he gets stuck and he should be fine. Plus, there are plenty of cheats in that game that would help- as well as provide hours of fun for a kid to fool around with. I know they did for me, even though I was a little older when I played it.

So, my son really enjoys watching me play FPS games, and wants to play himself.
He's played Team Fortress, CG:GO, F.E.A.R., Portal, Batman Arkham Asylum and possibly one or two others
But, (a) the games are a bit too mature for him, and (b) he's just not that good; he's still barely able to play with two hands. He only really uses one finger for moving. He takes his hand off the mouse to hit space so he can jump. etc. etc.
I'm just wondering if anyone knows of a game with a similar play style that is a lot easier (and hopefully not as scary / gory)
I was thinking of maybe starting him on something easier.
I have Hitman (2-5) Thief (1&2) and Max Payne (1&2) (apart from the acid scenes, which I'd do for him, the content is fine), which I think are good to start with. Or maybe Alice: The Madness Returns?
Or is there another FPS y'all would recommend?
I'm fairly liberal on content, and he won't notice the story whatsoever, though I would prefer it if it wasn't creepy or gory. But it's got to be extremely forgiving.
