I'd recommend trying out Morrowind.

If all you play is melee, maybe. But that's the ONLY playstyle. Magic? Touch, throw ball, self. That's it. It's an exceedingly boring system devoid of care. Sure, you can craft spells, but they're usually terrible and still suffer from that stupid limitation.
Skyrim has it's flaws too, but there's far more options in fighting. And with open world games like this you NEED variety in approaching a situation.

And I stand by what I said. I played Oblivion on a disc copy until the disc started cracking (which is a lot of playtime). Didn't once complete the main story line as I was so engrossed cave diving and doing random side quests and walking everywhere. Didn't complete, but played quite a bit of Shivering Isles, didn't get round to even starting Knights of the Nine.
I put ~100 hours into Skyrim in the 3 or 4 months after it's release, finished the main story and most of the major side quests at least once (main story, companions guild and mages guild I've done all of those twice). Haven't put any serious time into it since. Did a bit of fiddling with mods when workshop was released, but that was only a couple of hours.
For me: Oblivion was much more engaging, lasted a lot longer and was a generally better game than Skyrim. And I mean that. Don't think I'm hating on Skyrim, I enjoyed Skyrim, just found all the quest lines much shorter and easier, so easy to become very overpowered thus removing any challenge (without use of mods), and generally just felt a bit shallow in comparison.
Maybe that's all just the rose tinted glasses of nostalgia making Oblivion seem that good but I intend to pick up the GoTY edition in the summer sales and we'll see.
EDIT: and as for crafting spells in Oblivion: the limitations were to stop them becoming too over powered. As it was, you could quite easily make a super powerful spell despite the limitations you mentioned.

Try the original Arena! :) I had to gave up in the before the last dungeon. I was at max level with maxed out spells, superb equpment. But no matter what, i died constantly. No safe sleeping spaces, enemies keep coming when try to sleep.

It's not the power of the spells. It was the completely worthless implementation. There's more varied spells in 20 year-old cRPGs than anything Oblivion managed. They half-assed spell implementation, plain and simple.
Oblivion's worth a playthrough, but it's just not a strong entry that you're going to experiment with other classes or powers in.
Slightly off topic, but I've always been annoyed by games where enemies level up with you. What was the point of leveling then? It adds tension when some beast far over your level spots you and you need to run for your life. Makes exploration feel more like an adventure than just going from point A to B.
I'll give Oblivion this, it was very cool discovering a gate. Just wish it didn't feel like I was doing busywork when I discovered others due to the lack of variety.

Your question doesn't make any sense. Games created by Betheseda Game Studios are basically the one's you mentioned....

That's why Fallout 3 was so similar to Oblivion.
Obviously the best is Skyrim...which is also the best RPG ever created, and the most wished for game I believe.
If you mean games published by Betheseda but not made by them....then I have no idea, because they are known for two major things...the Elder Scrolls 3 4 5, and Fallout 3.

I'm gonna go out of my way and call for Wet! It's not my favorite but it's certainly the most underrated game published by Bethesda! It might not have great graphics (although they're still pretty solid) and the gameplay takes a little while to get the hang of but the over the top action, highly stylized design and Tarantino inspired story make it a very fun game indeed! I highly recomend it if you have a PS3/xbox 360!

gameplay-wise - skyrim. i mean its the smoothest game that they made so far. quests are terrible tho.
world - morrowind. - definitely one of the best rpg atmospheres out there, combat is horrible. fallout new vegas (if it counts) has seriously interesting world and quests. gameplay is ok.. it just sort of works even if you wouldnt really call combat overexiting.
