Original uses the GoldSource engine (a heavily changed version of the Quake engine), while the other version uses Source, so has ragdoll physics.
Perhaps you could try the fan remake, Black Mesa. It is a mod for Half-Life 2.
Also, while not related to the question, my favourite version was the PS2 release. I quite liked that one. Gearbox did nice work with the port, even made some things look nicer.

I snatched Half-Life 2 a while back but haven't got around to playing it yet. Partly because I haven't even played Half-Life - don't even own it - and would prefer to play them in order (or does it not matter at all if you know/played HF before playing HF2?).
What keeps me from buying Half-Life is there being two versions and while the decision should be easy (remaster version over possibly outdated original, right?) my gut and experiences tell me that "upgraded" doesn't always mean better.
So the question to those of you who know both version: Is "Source" really just remastered graphics or did they change anything else and in a way that makes the original still superior?
