Which game should my 6 year old play?
When I have a child, I will allow him to play any age ratings 3 years before, I guess that is a fair deal. Perhaps some exceptions, but I definitely would not let a 7 years old play games that give you reward for murdering people. I mean, with 7 years? No.

Considering the ridiculous nature of the ratings system, I don't think that makes a lot of sense. For one thing, there's huge difference in ratings rationale between countries. The ratings reflect public morality, not actual age appropriateness (and that's ignoring the wildly different levels of maturity between children of the same age)
In the U.S., movies can have pretty much unlimited violence by age 13, but even minimal nudity can mean 17. On the other hand, in Germany, nudity can be permitted at 6+, whereas violence can garner an 18 label.

Yeah, and I am german and socialized as german just like most of my neighbours and most friends my son will have, and so far I am happy with the rating system in germany, so why should I not use it?

If you really want to give him a FPS experience, I could recommend Nerf Arena Blast (Which seems to be free on abandonware sites). Don't give him adult content at that age.

Thief will be too difficult I think.
Try Serious Sam, Painkiller, Quake 3, Unreal Tournament with bots, Saints Row, Postal 1 & 2, Half-Life.
Why FPS and not Hack and Slash or Fighting games like Mortal Kombat, Street Fighter or Tekken?

It's sad to see so many people flaming you and even calling you a bad father because you're willing to let your young son play FPS games. Studies have already been done about this and they have shown that violent games don't have any negative effects on kids and that there's no correlation between violent video games and aggressive behavior in general.
I personally played violent and gory games at even younger age and they didn't mess me up. Children are not stupid, they know the difference between games and real world.
Anyway, since he's not that good at playing with both hands yet, maybe give him on-rails shooters like Blue Estate The Game? Unfortunately that seems to be the only good on-rails shooter on steam (didn't get it myself yet but it does look good).
The old Doom games, Shadow Warrior (the old one of course), Duke Nukem 3D should be easy enough, especially on lower difficulties. Serious Sam games should be easy enough on lower difficulties as well. Lets not forget about the Quake games. Maybe Metro games, I haven't played them so I don't know would they be too difficult for him. Singularity is a very good game.
If he's cool with top-down shooters I'd heavily recommend Alien/Zombie Shooter games. They are very enjoyable mindless shooters.

I've played Doom 2 and Duke Nukem 3D when I was 6 or 7. Thinking back, I sucked at them pretty bad, but I enjoyed them. You mentioned Portal, how about The Talos Principle?

I think you should consider Adventure genre too. It requires (mostly) only mouse input, extremely forgiving, some of them doesn't even have a decent story and (again, most of them) don't have extreme violence in it. I think Runaway series (and later Broken Sword) would be perfect if he decides that they are fun.
Also, my first game was Waxworks and let me tell you this: Horror games (especially psychological ones) doesn't work well with children. (:
But if you want him to develop motor skills to play with both hands, you should consider Portal. Basically the whole game is a tutorial. It should help.

It creeped the fuck out of me that you made a (: and not a :)! It is like psycho murderer turning his head horizontally and staring at you while smiling. Most likely with a smile that is not normal, but cut into his face. In a dark room with knifes that are losely pinned to the wall. While you are tied to a chair and have ducktape on your mouth.
I wonder wheter you learned using that (: smily due to your psychological horror experiences in your childhood :S

Edit: some good suggestions, and some good morality lessons so far. Keep it coming, folks
So, my son really enjoys watching me play FPS games, and wants to play himself.
He's played Team Fortress, CG:GO, F.E.A.R., Portal, Batman Arkham Asylum and possibly one or two others
But, (a) the games are a bit too mature for him, and (b) he's just not that good; he's still barely able to play with two hands. He only really uses one finger for moving. He takes his hand off the mouse to hit space so he can jump. etc. etc.
I'm just wondering if anyone knows of a game with a similar play style that is a lot easier (and hopefully not as scary / gory)
I was thinking of maybe starting him on something easier.
I have Hitman (2-5) Thief (1&2) and Max Payne (1&2) (apart from the acid scenes, which I'd do for him, the content is fine), which I think are good to start with. Or maybe Alice: The Madness Returns?
Or is there another FPS y'all would recommend?
I'm fairly liberal on content, and he won't notice the story whatsoever, though I would prefer it if it wasn't creepy or gory. But it's got to be extremely forgiving.
