One that comes to mind for me is Culex from Super Mario RPG. Took me years to beat growing up.

The final boss of Soul Blazer on SNES. I got to him multiple times over many years, but it wasn't until I discovered there was a cheap trick you could use to make your character more powerful that I was finally able to beat him.

Cybil Bennett at the Merry-Go-Round, in Silent Hill.
I had no idea what I was doing, very low on ammo, and eventually I gave up the game there.

Yeah, no wonder. Instant counters, unavoidable projectiles and he clearly cheats. The giant mech from Tekken 6 is also hard as balls.

Warhead from Vectorman, simply because it requires a bit of luck.
Ridge Racer 7, dont know its name, they all cheat, but one track made it unbearable

The Crystal King (west zone boss) in Hyper Light Drifter is the first to come to mind.
The final battle of Mortal Kombat: Shaoling Monks was super unfair because it was three battles, one after another, with no checkpoints, while having only one health bar.
Also, not technically a boss, but do anyone here remember PSX's Yu-Gi-Oh! Forbidden Memories? That game had the weirdest difficulty curve ever.

I wasn't sure what to answer in this topic, but I think you just hit the nail on the head. I'm pretty sure I never finished Forbidden Memories because some of the later duels were so ridiculously slanted in your opponent's favor.

I got to finish it in 2015, 13 years after it was released outside Japan. You play the last three duels one after another (just like in MK:SM), and they require you to draw the EXACT cards you need right from the beginning. The most frustrating part was that, even when you were dueling the late-game oponents, winning gives you the same three ATK900-DEF1200 cards but they were using cards like Meteor Black Dragon (3500/2000).

Well, I did say games in the title so, yes. MMO's do count.

So I FINALLY cleared Titan Quest on normal difficulty for the first time after having the game for YEARS. I was specifically told that the final boss in the Ragnarok expansion was supposed to be one of the hardest bosses. I was LIED to. That boss was WAY too easy and I wasn't even a high level. Needless to say, I was sorely disappointed.
But I digress.
So it got me thinking, as usual.
What was the single HARDEST boss you ever fought in a game? One that gave you nightmares and possible need for therapy afterwards.
Might take me a bit to remember some of mine so please feel free to add in yours.
