I want to suggest Reus and Renowned Explorers
I'm gonna do it, I'm gonna say it. Renowned Explorers is kinda like FTL. There, I said it!
Both games are by same developer. They are kinda puzzle games, kinda management games, kinda strategy games. Reus is a god simulator. You play as 4 gods that shape the land. If people have water nearby, they will probably fish. If they fish a lot, they might become good with weapons and attack those peaceful guys who just eat berries and fruit. There are tons of ways to grow civilizations and tons of ways for them to develop. And game makes this easy with achievements.
Now, the other game is more strategy like. It's also kinda hard (though devs released easy mode). I like how similar to FTL, you might find grand quests in the game. You might start them and never know how to even do it. But over multiple plays, you will notice patterns and will be able to do the quest. There are a lot of mystery there and a lot of combinations to try out. I loved the game!

GTA .. pretty much every part. I tend to come back and finish the stories again and again
Sims - altough haven't played that one for some time, don't have that much time, altough did play it a lot when I was still in school.

multiplayer games have that infinite possibility, while it can breed some toxic mutants, you cant deny the popularity of games like Dota and Pubg.
having human opponents (or ally) gives a different story for each game. make every new match exciting
Strategy games benefits from that, even single player mode (vs AI). and the more complicated it gets the bigger change you can have in each new match. just look at Civilization and Totalwar players.
you could say the same about sports/management/RPG/Rougelikes. but they have an End goal that could trick you in feeling done with the game (exceptions exist to every rule).
to me, Civ is the game i play when i have nothing to play :) . it can be fast and easy or long and hard ^^
its great for players who need to set their pace, and dont want to stress the hand and eyes for reflexes

Unless a user is really really crazy about a sports game, there is like no reason for anyone to play, buy or even suggest someone any of the sports game. Be it madden, nba, fifa or pes. Madden - same game every year. Same thing with fifa or pes. Fifa 2077 is going to have the exact same review as fifa 2021. Nba is basically gambling casino. All of these are easy money for them.
Like they don't feel like a good suggestion for this thread. But I can be entirely wrong about this.

If you want a specific game Phantom Abyss came out recently and seems like a good option. Haven't played it but saw some streams, it's like a modern 3D Spelunki.

Not sure if it counts as replay value, as I didn't get close to completing everything, but Galaxy reckons I've spent 345 hours playing Forza Horizon 4, which is a LOT for me.
I bought the ultimate edition for £50, so almost the most I've spent on a game recently. Not sure what that means in terms of value!

Factorio is built around that premise. There is a set goal, but you can continue playing after reaching it, as it unlocks new "post-game" technologies to research and you can always improve and grow your factory and enemies keep on getting stronger.
If you start over there are so many ways to play, you can start multiple games and play them all differently. You can also play around with map creation, there are several presets that challenge you to play in different ways, and you can fine tune it to your liking too.
You can also play online, it's really fun to find a group that you can colaborate with, see what other people are creating, and to get your friends in the game and teach and learn with them.
It's also constantly getting updated. If you haven't played in a while there's likely to be so many things that have been improved/rebalanced you'll have a fresh experience coming back.

The Binding Of Isaac: Rebirth has waaay more content since Repentance dropped. I'll never get tired of it. Great game

Yeah, I agree, the game is really hard now, but you get used to it. Maybe people are kinda angry about general fixes of gamebreaking mechanics like blank card+jera, double steam sale and others.
And I can't say Repentance is harder then flash's Wrath of the Lamb which I still can't beat :(
Repentance made TBOIR 10 times better and funnier imo. With new floors, enemies, bosses, items, secrets, alt characters etc it's a whole new experience. I love it.
